This recipe is a triple play: easy, inexpensive, and delicious.
I adore beets. But, it wasn’t always that way. I hate to even admit out loud that I was once a member of the “I hate beets” club.
What was I thinking?!
Perhaps it was bad memories of the pickled variety that my grandmother passed around at Christmas dinner and I obediently put on my plate (before hiding it under my napkin as I put my “empty” plate on the sink minutes later).
But, all that has changed as I grew up and experimented with this amazing root vegetable.

I, fall in love with beets more every day as I create new ways to show off its lovely color – and flavor.
This recipe for beet chips is ridiculously easy. The sweet flavor and crisp texture will blow you away.

Ingredients:
- 4 medium beets
- 1 air fryer
That’s all you need! I’m not joking!
Instructions:

Slice the beet chips very thin. Allow to sit out for about 30 minutes to dry a little.
Add them to the air fryer in small batches so they don’t overlap. Air fry at 400 degrees for 15-18 minutes. Stop the fryer every 5-6 minutes to turn the beets over.
Watch them to be sure that they don’t burn! They will crisp up and the natural sugars will taste like candy!

Can you season them?
Sure. If you want to. Some rosemary, dried chives, or sea salt. But, I like them plain.
