Easy Chex Mix Flavored Popcorn

I recently got some free packets of Chex Mix seasoning from the grocery store. We were invited to a party that week and I decided to take popcorn, which was flavored using the seasoning packet.

I assumed that someone else had already figured out a way to add the seasoning packet mix to plain popcorn, creating easy flavored popcorn.

Not so!

I looked all over the internet and could not find even one recipe using just popcorn and Chex Mix seasoning.

So, I created one for you!

This recipe for Chex Mix Flavored Popcorn is:

Materials needed:

NOTES on oil: Coconut oil will give you a fresh tropical flavor or Earth Balance shortening is perfect for vegans. You can also use butter or margarine. Crisco makes baking sticks with the consistency of margarine, but the flavor of butter.

Step 1: Pop Popcorn and Melt Oil

Pop a double batch of popcorn. Set aside in a large container. Be sure it is large enough that you can stir the mixture without the popcorn falling all over the table. (You can guess how I knew to add this tip!) This should yield 10-12 cups of popped popcorn.

You need the oil so that the contents of the seasoning packet stick to the popped corn. You can use whatever oil you like. I used Earth Balance vegan shortening. But, butter, margarine, or coconut oil would also work. The coconut oil will, of course, make the finished snack taste a little tropical.

Melt 4 Tbsp. of oil in a small bowl. Use the microwave on “high”. Set the time for 30 seconds and then check to see if the oil is completely melted.

Step 2: Stir Seasoning Into the Oil

Using a whisk, stir in the contents of the seasoning packet into the oil, adding a little at a time until it is fully incorporated into the oil.

Step 3: Drizzle Oil Mixture Over Popcorn and Stir

Drizzle the oil mixture over the popped popcorn and stir with a spoon. Be sure you get the corn at the bottom of the container stirred in with the rest. The oil will tend to sink to the bottom and will ensure that you don’t wind up with a puddle of oil in the bottom of the container.

That’s it!

Easy and delicious! Every guest at the party loved it and declared it to be “addictive”.

    • I actually agree with you. I tried to figure out a way to do it oil free. But, really adding some oil was the only way to get the spice packet to stick. But, you’re right. The kids loved it!
